Rumex acetosa
Common name(s): sorrel, garden sorrel
Description: perennial; a very nutritious herb with a higher vitamin content than both kale and spinach. Forms a rosette of tangy green leaves that can be harvested at any time. Young (small) leaves have the best flavor and are best for fresh applications; older leaves are best for soups or sauces. Quite popular in Eurasia and parts of Africa, but not as well- known in the U.S.
